Advantame is a new generation of sweetener synthesized from amino acids. It is a derivative of aspartame and neotame, and its sweetness is 20,000 times that of sucrose. In 2014, the US FDA issued a final regulation, approving the high-intensity sweetener Edvame as a non-nutritive sweetener and flavor enhancer for use in foods other than meat and poultry. Announcement No. 8 of 2017 approved Advantame as a sweetener for use in food and beverages.
White to yellow crystalline powder with a melting point of 101.5℃. At 25℃, 0.099g can be dissolved in 100mL of water. It has excellent stability in mixed powder formula applications, and its sweetness will not decrease under normal storage and processing conditions. Under storage conditions of 25℃ temperature and 60% relative humidity, the retention rate of the table sweetener mixture remained above 90% after 25 months of storage, while the retention rate of solid beverages still reached over 96% after one year of storage.
It is 20,000 times sweeter than sucrose, with a refreshing and pure taste, similar to that of sucrose. It has high stability, does not react with reducing sugars or aldehyde flavor compounds, has no calories, is safely metabolized, and is not absorbed.
Advantame is synthesized through a chemical reaction between aspartame and vanillin.
Advantame is the substance with the highest sweetness ever utilized by humans. As a sweetener, it can be used in many foods, and its dosage can be much lower than that of sucrose and other high-intensity sweeteners currently available on the market. Edvame has good water solubility and high heat resistance, making it suitable for high-temperature processing of products. Advantame is a derivative of aspartame, and its chemical structure is similar to that of neotame. However, the actual sensory sweetness of 20,000 times that of Advantame varies depending on its concentration and the food it is applied to. A high-intensity sweetener with a concentration equivalent to 3-12% of sugar in aqueous solution has a sweetness ratio 14,000 to 48,000 times that of sucrose and 90 to 120 times that of aspartame, a sweetener with a similar structure.
